Grape: 100% Viorica
Made entirely from Viorica grapes, harvested manually in the cool of the night and vinified using the traditional method, this white dry wine is a sensory explosion: aromas of acacia flowers and basil, a golden color with bright amber nuances and a balanced taste.
It’s fresh, light and memorable. The golden color with bright amber hues complements beautifully with balanced, velvety taste. Viorica conquers with its complex aroma and subtle finesse.
The Viorica grape variety is a variety with individuality: it appeared in Moldova in 1969, following a successful winemaking experiment. “The Parents” of Viorica are two red grape varieties – Seibel and Aleatico. Paradoxically the result of crossing was a white grape variety.
Harvested in the evening makes the wine especially fine and a different presentation of the day harvested. A must try wine!
Harvest: manual during the night
Pre-fermentation: cold room 0-2 C for a night, grapes destemmed without crushing, cryomaceration (3-5 C) for 6-12 hours in press, debourbage 7-12 days
Fermentation: Two step fermentation 8-10 C then 16-18 C
Malolactic: partial (30%) in stainless steel tanks
Maturation: After racking a short batonnage until the final blend is produced.
Total acidity: 6.1 g/L
Total sugars: max.4 g/L
